Peanut butter avocado popsicles, because avocado is not only to eat on toast and salads...

Peanut butter avocado popsicles on display, easy recipe

JUMP TO RECIPE

At our mother 's house, we've always had a beautiful avocado tree, with large and creamy fruits.

During harvest time, every day we ate avocados in salads, or with arepas and cheese... One day, one of my brothers took an avocado and made a kinda smoothie-milkshake to which he added peanuts.

We were very surprised with his invention, taking into account the limited repertoire for consumption that we knew about this wonderful fruit (at that time the avocado toast wasn't a thing!).

Since then, I've had that combination of flavors well guarded in my taste memory and of course had to share it here on the blog.

My first idea was to make a smoothie as my brother did, but I wanted my daughter to eat it also. So I decided to try these ice pops.

Does avocado and peanut butter go together?

Maybe you´re be wondering about this combo, but let me tell you, you be surprised, they are one for another.

The combination of flavors in this recipe is a great plus, the recipe requires little preparation and the result is a thick, creamy mixture; has little sugar, as both peanut butter and yogurt bring some sweetness (I used vanilla flavored yogurt).

If we talk about nutritional benefits, avocados are rich in healthy fats, contain minerals such as iron, copper and potassium, and are a heart healthy fruit;  peanut butter is a good source of protein and even more healthy fats, it also offers vitamins as the B vitamin niacin, iron, potassium and vitamin E.

How to make avocado popsicles

This is a very simple recipe. You just need to blend all the ingredients and freeze.

It is important to get good avocados, with the yellow over the center of the fruit, you don´t want those flavorless ones... If you love peanut butter, can add some more, you can use creamy or chunky.

If you don´t have ice pop molds, don´t worry: use small plastic or paper cups; you can also put the mixture into a metal mold, freeze and consume scooped as regular ice cream.

tip

💡 wrap each ice pop in a plastic film, keep them in a resealable bag or container, so they don´t take up much space in the freezer.
