Summer is almost over, but we still have some days ahead for enjoying fresh and light food.

That makes me think about this creamy lemon dessert, a simple and easy to prepare cheap treat; it requires only 4 ingredients and is not overly sweet.

For equipment, we just need an electric mixer unless you have enough arm strength and patience to whip evaporated milk with a whisk, but having a blender at home I don´t think this is the way to go 😄

A bonus? This recipe doesn´t require an oven! 👐

A crucial point in this recipe is whipping the evaporated milk at medium speed. You don't want to be impatient and try to do it faster at high because it will deflate the foam as this cream contents no condensed milk, gelatin, cream or eggs to keep volume.

Think about whipping egg whites like making a meringue, that´s what we´re trying to achieve here.

The idea is to do it enough time in advance to be at least 2 hours in the refrigerator. My experience has been that the second day, the cream begins to lose volume, but still good.

You can also freeze it and then leave it in the refrigerator to soften before eating, but I would do this in the extreme case when no one is around to eat it and I am forced to keep it for more days.

I like to decorate this dessert with some fresh fruits like strawberries, raspberries, or as I did this time, with blueberries, it adds another layer of flavor and freshness.

Some people make this dessert without cookies, but I like the texture that gives the crushed crackers, it reminds me a bit of a lemon Carlota.

Even as this dessert it´s perfect for a hot day, it can be enjoyed all year long, especially after heavy tasty meals!
